Ingredients

1 cup 2% fat milk

2 tbsp and 1 teaspoon pure maple syrup

2 1/4 teaspoons yeast

2 3/4 cups bread flour

2 teaspoons ground cinnamon

3/4 teaspoon ground nutmeg

1/2 teaspoon kosher salt
For the topping:

1 tbsp Maple Syrup
-
3 tbsp sugar
-
2 tbsp Brown Sugar

½ tsp cinnamon

1 tbsp melted butter
-
1 tbsp flour
For Boiling:

8 cups water
-
1 tbsp baking soda
-
1 tbsp brown sugar
Instructions

Heat milk and stir in maple syrup. Whisk in the yeast and let sit for 3 to 7 minutes.

In a separate bowl, mix flour, cinnamon, nutmeg, and salt together. Add into the milk mixture and stir

Remove the dough and knead dough about 5 minutes

Add dough into new bowl and cover
-
Place in a warm location for a minimum of 2 hours.

When ready to prepare bagels, remove cloth and punch down dough. Remove from bowl and let is sit again for 5 to 7 minutes on a floured surface.

Using a sharp knife, cut the dough into 8 equal pieces. Form each piece into a round circle. Place your floured finger through the center of each piece of dough to form the bagel.

preheat oven to 425*F and Heat water and add brown sugar and baking soda

Boil the bagels fro 1 minute on each side

Mix together the topping and top each bagel

Bake for 20-22 minutes or until surface is golden brown.
